Happy Halloween!!

I love Halloween. I used to be all weird about it because I grew up in a tiny conservative tiny tiny tiny conservative small Texas town… But now I just embrace it for all of its kitschy costumey goodness. I mean, it is FUN.

I also LOVE getting to do themed treats. And so last night I set out on a baking EXTRAVAGANZA. At like 9:00pm. I’m sleepy today. But I have such cute treats for mine and the hubbin’s offices!

(Yeah, I totes did phone pictures again… My bad. But look how pretty!)

Chocolate Cake Cookies (AKA Cocoa Puff Cookies)

Nom.

I got home late from rehearsal last night but wanted to bake something quick and simple and delicious. I’d been meaning to try this chocolate cookie recipe I grabbed awhile ago and happened to have all of the ingredients in my pantry. And so I did!

I honestly have no idea why the photo came out in such a weird yellow hue, but whatevs. They turned out to be very pretty. Next time I won’t be lazy and will take a picture with a proper camera and not my phone.

Maybe.

SO. These cookies turned out to be very good! I thought they tasted like Cocoa Puffs, and so my husband and I have renamed them Cocoa Puff Cookies. They are soft and cakey and very light. I ate two before I could stop myself. The rest are packed up and will be going to rehearsal with me tonight – let the cast get chubby off of them! ;o)

Chocolate Cake Cookies / Cocoa-Puff Cookies
Made 28 Cookies

Ingredients
1 cup butter (at room temperature)
1 1/2 cups sugar
2 eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
2/3 cup baking cocoa
3/4 teaspoon baking soda
1/2 teaspoon salt

White Sugar for Rolling and Confectioner’s sugar for Dusting.

1. In a mixing bowl, cream butter and sugar.

2. Add eggs, one at a time, beating well after each addition. Beat in vanilla.

3. In a separate bowl, combine flour, cocoa, baking soda and salt

4. Slowly add to the creamed mixture. Mix well.

5. Cover and refrigerate for 1 hour or until easy to handle - this part was very important. I actually had to put mine in the freezer for awhile as this recipe makes a very gooey dough.

6. Roll into 1 inch balls and roll each ball around in white sugar until coated.

7. Place each cookie at least two inches apart on greased baking sheets.

8. Bake at 350 degrees for 9 minutes or until the edges are firm.

9. Allow to cool on wire rack.

10. Dust warm cookies with confectioner’s sugar.

I hope you’ll stick around awhile! I am always concocting new things and trying new recipes. I love all things retro and vintage and am always starting a new project.

I’m also not very good at the introductory About Me posts… So I thought I’d try to make this one interesting and different.

So - Ten Random Facts About Smash:

1. I don’t have a favorite color. Or movie. Or song. In fact, I don’t really believe in favorites. I think that so many things are so wonderful – how could I ever choose?

2. I am obsessed with shoes and have an insane shoe collection. Seriously – my husband once moved all of my extra shoes to our guest bedroom and reclaimed it as my Shoe Room because there wasn’t room for them anywhere else. Today I am wearing Burgundy Peep-Toe Stilettos with a gold buckle. You’re welcome.

3. I love pugs. I have two: Maggie and Bandit. They are my children. I also have a cat, Penny. She is often annoyed at the two Pugs.

4. I’m married to an amazing man who will never ever read this blog but thoroughly enjoys my baking.

5. I could eat an entire jar of pickles in one sitting without thinking twice.

6. I have never seen the Star Wars movies.

7. I am a huge Harry Potter Nerd.

8. I am also a writer and will be taking part in my third NANOWRIMO next month.

 

9. I am so addicted to coffee that I quite simply can’t imagine a day without it.

10. I do a lot of theatre. I studied acting in New York and work in local productions often. It’s good fun.
